I just took a parenting a newborn class 2 days ago and a girl asked that. The teacher said honestly nothing. It's just for if you or the dad has a latex allergy, you can get silicone to be safe!
I found that the latex ones were easier for my son vs the silicon which tend to be more firm. However, the latex ones do wear out and will need replaced after some time. Still, I preferred them.
